Every year my family and I and our friends go on a camping trip that we have been doing for 20+ years (crazy!). It’s filled with rich traditions that began when I was young and we have since built on them as time has gone by and things have changed. Every inch of the campground we have been going to is filled with vivid memories of years before. While we reminisce over a crackling fire we laugh and talk and we always eat well.
This year, we excitedly decided to do dutch oven meals in our Lodge cast iron cookware. Last year it was a cook off between the campsites to what could be made and let me tell you, we may be sleeping in tents but we eat gourmet meals! The dutch ovens are great to share meals with a group of people. It’s basically like a rustic version of a crock pot – one that you have to watch a little more closely – but the results are wonderful. Hands down, best Pulled Pork I’ve had! (Based on this recipe).
The dutch ovens are great for any meal and we tried out some delicious desserts after we made dinner! It was our friend Ed’s birthday so I came up with a simple idea since we were camping and all – A S’mores cake!
-Crush graham crackers and make a bottom layer
-Layer pieces of chocolate in the middle
-Top with marshmallows
-Bake with hot charcoal and the marshmallows will become brown and melty along with the chocolate. It’s SO good. We all devoured it.
Other dishes we made were: Beef Stew with pull apart rolls (A classic!), Strawberry rhubarb crisp, summer squash and zucchini, and even a big pot of amazing lasagna! I encourage everyone to try this cooking method, it is so delicious and easy. A great thing to do for summer meals, or any season really! It pairs even better with an after dinner sunset kayak :)
